Wraps are summer goodness!

kalamata olives

The inspiration for this meal was this container of kalamata olives fresh from Greece that V brought home last Friday.

herbs
I minced some chives and parsley...

empty wineglass
(notice my glass of wine is, sadly, already empty!)

green goddess
...for a green goddess dressing (herbs, mayo, sour cream, lemon juice, rice wine vinegar, salt, pepper).

tomatoes
Oh! These are beautiful tomatoes! An impossibly delicious avocado lies in wait of my knife.

wine full
(Notice that I've refilled my wine, so the mad cooking can resume).

cut tomatoes
Could they possibly be more beautiful when they're cut up? Oh my! I think so!

seeded olives
I have a great way of seeding olives...I turn them upright and gently smash them against my cutting board. Sure, it's messy, but being messy is part of the fun! The seeds come right out, generally with a few pieces of olive-flesh still clinging to them...so the seeds go right into my mouth! Why waste such deliciousness?

partially complete
I don't even have everything in the bowl yet, but I have to take a photo, it looks so pretty!

avocado
Ah, my lovely beloved avocado. This avocado was perfectly ripe and creamy and eating it was like SEX.

dressed
I dressed the veggies and feta...

assembly
We placed burgundy lettuce on top of flour tortillas, then added the dressed veggies.

yum!
YUM!
